What We'll Cover
On the list of must-try easy camping recipes, along with great recipes like bacon-cheese quiche and Dutch oven lasagna, is chili. Most campsites will have a fire pit or place to set up your camping kitchen outside. Charcoal and commercial fire starters make starting a fire easy. Some commercial fire starters even burn in all types of weather conditions. Charcoal is another easy way to start a fire with or without lighter fluid. Once the fire is light and hot, putting a raised campfire grill grate over it allows you to set the Dutch oven on a raised surface. Whether you’re cooking on a hot campfire or grill, a durable metal grate will make cooking easier.
When cooking over a campfire or camping stove, you should have camping utensils, heavy oven mitts and pot holders to protect your hands from burns. The ingredients should be prepared ahead of time before you begin cooking.

- 3 tablespoons chili powder
- 1 teaspoon cumin

How to Prepare the Chili
Add the olive oil to the Dutch oven. Let it heat up, and then add the ground beef and sausage meat and let it brown. Cut the peppers on a cutting board. Remove the seeds and discard. Chop into bite-size pieces and do the same with the jalapeño pepper. Peel and chop the two white onions into bite-size pieces, and add to the pot with the ground beef. Let this cook for a while. Stir constantly, then add the cans of tomato and broth to a Dutch oven.
When the ingredients begin to simmer, open the canned beans and drain. Rinse under running water and drain again. Add this to the chili pot or Dutch oven. Add the 2 tablespoons of chili powder, 1 teaspoon of cumin and garlic powder, and a few dashes of hot sauce to taste. Let it cook slowly for the best results.
